Cherry Vodka
This traditional Eastern European infusion is wonderfully simple to prepare. Using fresh cherries, sugar and vodka, you create a richly flavoured spirit perfect for sipping chilled. The process involves gently cooking the fruit to release its juices before combining it with the alcohol. After a patient steeping period, the result is a smooth, cherry-infused vodka that can be enjoyed neat or lengthened with a mixer. It makes for a superb homemade gift or a delightful addition to your drinks cabinet.
Ingredients
- 400g cherry
- 200g caster sugar
- 70cl bottle vodka
Method
- Make a slit in each cherry, ensuring you do not slice them completely in half.
- Place the cherries into a saucepan with the sugar and 150ml water. Warm the mixture, stirring occasionally, until the fruit releases its juice and the sugar crystals have fully dissolved.
- Take the pan off the heat and carefully transfer the contents into a large, clean bottle or jar.
- Pour in the entire bottle of vodka and stir thoroughly. Seal the container and allow it to rest for 4 weeks so the flavours can develop fully. To serve it ice cold, store the finished bottle in your freezer (it will remain liquid) or pour it into a decanter if preferred.
