Cherry Dot Cookies
These charming cookies combine chopped dates, nuts, and maraschino cherries in a soft dough. Each portion is shaped into a ball, rolled in crushed corn flakes for texture, and baked until golden. A quartered cherry adorns the top of every treat before baking, creating the signature 'dot'. The recipe yields about 30 cookies, ideal for gatherings or a sweet homemade gift.
Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup margarine or 3/4 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 tablespoons nonfat milk
- 1 teaspoon vanilla
- 1 cup chopped nuts
- 1 cup finely chopped pitted dates
- 1/3 cup finely chopped maraschino cherry
- 2 2/3 cups kellogg's corn flakes (crushed to 1 1/3 cups)
- 15 maraschino cherries, cut into quarters
Method
- Combine the flour, baking powder, and salt in a mixing bowl, then set this dry mixture aside.
- Using a large electric mixer bowl, cream the margarine and sugar until pale and fluffy. Beat in the eggs thoroughly, then stir in the milk and vanilla. Mix in the reserved flour mixture until fully combined. Fold in the nuts, dates, and the 1/3 cup of finely chopped cherries.
- For each cookie, measure a level tablespoon of dough and shape it into a ball. Roll each ball in the crushed corn flakes. Place them roughly 2-inches apart on baking sheets that have been coated with cooking spray. Press a cherry quarter onto the top of each cookie.
- Bake the cookies at 350° F for about 10 minutes, or once they turn a light golden brown. Transfer the cookies from the baking sheets straight onto wire racks to cool completely. Keep them stored in an airtight container.
