Cherry Cheesecake Slice
This impressive American dessert is ideal for dinner parties, offering elegant slices of creamy vanilla cheesecake on a buttery shortbread crust. The topping features cherries stewed in caramelised sugar, finished with a glossy reduced syrup. It requires chilling to set completely before serving. The recipe yields eight portions and takes around 80 minutes to prepare and bake.
Ingredients
- 200g pack shortbread biscuits
- 50g melted butter
- 2 x 300g tub soft cheese
- 1 tsp vanilla extract
- 175g golden caster sugar
- 2 tbsp plain flour
- 2 eggs
- 50g golden caster sugar
- 400g cherry pitted
Method
- Set your oven to 160C/fan 140C/gas 3. Prepare a loose-sided metal terrine tin (27 x 10cm, 7cm deep) or a loaf tin of similar size by greasing and lining it with baking parchment. Process the shortbread biscuits in a food processor to create fine crumbs, then add the 50g melted butter and blend until the mixture resembles smooth peanut butter. Firmly press this blend into the base of your prepared tin.
- Combine the soft cheese, 1 tsp vanilla extract, and 175g golden caster sugar, beating until smooth. Next, incorporate the 2 tbsp plain flour and 2 eggs, mixing until fully combined. you can do this by hand or using the food processor. Pour this filling over the biscuit base and level it with a spatula. Bake for about 1 hr until the centre is just set and the edges have a light brown tinge. Allow it to cool outside the refrigerator, then chill it until completely cold.
- As the cake cools, scatter 50g golden caster sugar into a frying pan. Heat it until the sugar caramelises. Add the 400g pitted cherries and cook them in the sugar for 3-4 mins until they become sticky and release their juices but remain mostly intact. Let the cherries cool, then strain their juice back into the pan. Boil this juice to reduce it to a thick, sticky syrup and set it aside to cool. To serve, carefully release the chilled cake from its mould onto a board and let it sit at room temperature for 30 mins. Just before serving, spoon the cherries over the top, drizzle with the syrup, and cut into slices.
