This British snack offers a more substantial take on classic cheese on toast. It uses only five ingredients to create a filling and flavourful treat in just 10 minutes. Large flat mushrooms are cooked in herb butter until golden, then filled with spinach wilted in the same pan. Topped with cheddar and grilled until melted, each stuffed mushroom is served on a thick slice of buttered toast, with the savoury pan juices spooned over the top.

Cheesy Stuffed Mushrooms on Toast

Ingredients

  • 50g butter with Mediterranean herbs, or garlic butter
  • 4 large flat mushrooms
  • 225g bag baby spinach
  • 4 thick slices of bread preferably granary from a small loaf
  • 4 generous slices of cheddar cheese about 100g/4oz

Method

  1. Switch your grill on to high to preheat. Place three quarters of the butter into your biggest frying pan and melt it. Remove the stalks from each mushroom and place the mushrooms in the pan, flat side down. Add the torn stalks to the pan around the mushrooms. Cook for 5 minutes, flipping the mushrooms halfway, until golden and juicy.
  2. While the mushrooms cook, toast the bread using a toaster or under the grill. Spread the toast with the leftover butter once ready.
  3. Transfer the mushrooms to a shallow heatproof dish, placing them cup side up. Add the spinach to the frying pan with the stalks and cook for about a minute, stirring, until just wilted. Divide the spinach mixture over the mushrooms, top each with a slice of cheddar, and place under the grill briefly until the cheese melts. Serve each mushroom on a slice of buttered toast, drizzling the pan juices on top.
