These individual pies are a fantastic family dinner, combining sliced cooked sausages, haricot beans and a rich tomato passata filling encased in flaky pastry. Using a sheet of shop-bought puff pastry makes preparation straightforward. They bake until beautifully golden and are best served warm with a fresh salad on the side. This recipe yields four generous portions, ideal for a comforting weeknight meal.

Cheesy Sausage and Bean Pies

Ingredients

  • 400g can chopped haricot beans drained and rinsed
  • 4 sausages cooked, then sliced into rounds
  • 150g passata
  • pinch of dried oregano
  • 4 spring onions chopped
  • pinch of sugar
  • 320g ready-rolled puff pastry sheet
  • 50g cheddar grated
  • 1 egg beaten
  • salad to serve

Method

  1. Set your oven to 200C/180C fan/gas 6. In a bowl, mix the drained beans, sliced sausages, passata, oregano and chopped spring onions, seasoning the mixture and adding a pinch of sugar.
  2. Take the pastry sheet and cut it into four equal rectangles. Place a portion of the bean and sausage mix on one half of each rectangle, keeping a 1cm border clear. Scatter the grated cheddar over the filling.
  3. Use the beaten egg to brush the pastry borders. Fold the empty half over the filling to create a parcel. Crimp the edges shut with a fork and transfer to a parchment-lined tray. Glaze with more egg, then make a small slit in each pie top. You can chill them for up to 24 hrs. Set the oven to 180C/160C fan/gas 4.
  4. Place the tray on the middle oven shelf and bake for 40 mins until the pastry is golden. Allow the pies to stand for 5 mins before serving alongside a salad.
