Cheesy Sausage and Potato Breakfast Casserole
This satisfying breakfast bake is ideal for a group. It combines grated potatoes with browned pork sausage and sweet onion. These are mixed with eggs, milk and Cheddar cheese before being baked until golden. The result is a flavourful, cheesy dish that serves eight people from a single 9x13-inch pan.
Ingredients
- 1.5 pounds potatoes, peeled
- cooking spray
- 1 (16 ounce) package pork breakfast sausage
- 1 sweet onion, chopped
- 7 eggs
- 1 (8 ounce) package Cheddar cheese, grated, divided
- 0.5 cup milk
- salt and ground black pepper to taste
Method
- Set your oven to 450 degrees F (230 degrees C).
- Use a fork to prick the potatoes in several places and place them on a baking sheet.
- Bake the potatoes until they are soft, which will take 50 to 60 minutes. Take them out and allow them to cool for at least 15 minutes.
- Lower the oven temperature to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
- Place a large skillet on the heat. Cook the sausage, stirring it, until it is browned and crumbly, 5 to 7 minutes. Move it to a bowl. Cook the chopped onion in the same skillet until translucent, about 5 minutes, then add it to the sausage.
- To the bowl with the sausage and onion, add the eggs, half of the grated Cheddar cheese, milk, salt, and pepper. Combine everything thoroughly.
- Grate the cooled potatoes and stir them into the egg mixture in the bowl. Transfer the combined mixture to the prepared dish. Top with the remaining Cheddar cheese.
- Bake the casserole until it is heated through and the cheese on top is melted and bubbly, about 35 minutes.
