Cheesy Sausage and Pasta Bake

Ingredients

  • 2 green onions
  • 6 medium sliced mushrooms
  • 1/2 cup chopped red peppers or 1/2 cup green pepper
  • 2 tablespoons butter
  • 2 cups macaroni or 2 cups shell pasta
  • 5 sliced cooked Italian sausages (preferably bar-b-qued or grilled)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup whole milk
  • 1 cup ricotta cheese or 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded parmesan cheese
  • fresh ground black pepper
  • salt, to taste
  • 3/4 cup breadcrumbs

Method

  1. Cook the Italian sausages, then slice them and set aside.
  2. Sauté the green onions, mushrooms, and peppers in 2 tablespoons of butter until softened.
