Cheesy Sausage and Egg Enchiladas

Ingredients

  • 1 lb bulk sausage (sage works best)
  • 5 eggs, beaten
  • 1 (16 ounce) jar salsa (chef's choice)
  • 2 cups shredded Mexican blend cheese
  • 10 flour tortillas

Method

  1. Crumble the sausage into a skillet and cook until browned.
  2. Drain the sausage, keeping two tablespoons of the drippings.
  3. Place the sausage and the reserved drippings back into the skillet.
