Ingredients
- 1 lb bulk sausage (sage works best)
- 5 eggs, beaten
- 1 (16 ounce) jar salsa (chef's choice)
- 2 cups shredded Mexican blend cheese
- 10 flour tortillas
Method
- Crumble the sausage into a skillet and cook until browned.
- Drain the sausage, keeping two tablespoons of the drippings.
- Place the sausage and the reserved drippings back into the skillet.
- Pour in the beaten eggs and scramble them to your preferred consistency.
- Mix in half a cup of the salsa and one cup of the shredded cheese.
