This is a tasty take on a traditional Scottish border favourite. It combines mashed potatoes and turnips with buttery savoy cabbage, all topped with melted cheddar. The dish can be assembled ahead of time and baked when needed, making it a convenient side. It is an excellent accompaniment for roast beef. The recipe serves eight people.

Cheesy Rumbledethumps

Ingredients

  • 2 1/4 lbs potatoes
  • 1 1/4 lbs turnips
  • 4 ounces butter
  • 14 ounces savoy cabbage, finely sliced
  • 2 ounces cheddar cheese, grated

Method

  1. Peel and chop the potatoes and turnips, then boil them together in a large pan of salted water for 25 to 30 minutes until tender.
  2. Set your oven to preheat to 325*F.
  3. Drain the cooked vegetables well, return them to the pan and cover it tightly. Shake the pan over a low heat to dry them out completely.
  4. In a separate pan, heat half the butter. Add the finely sliced cabbage and cook for about 3 to 4 minutes until just tender but still bright green. Tip the buttery cabbage into the potato pan and add the remaining butter.
  5. Mash everything together roughly and season to your taste with salt and pepper.
  6. Transfer the mixture into an ovenproof dish. Sprinkle the grated cheese on top and bake for 30 minutes.
  7. Before you serve, preheat the grill. Flash the dish under the grill for 5 minutes to brown the top.
