Cheesy Roasted Onions with Smoked Paprika

Ingredients

  • 8 medium onions, preferably white
  • 2 tablespoons olive oil
  • 4 tablespoons grated parmesan cheese
  • 1 pinch of grated nutmeg
  • kosher salt or sea salt
  • fresh ground black pepper
  • 250 ml real cream
  • 1/2 teaspoon smoked paprika

Method

  1. Preheat your oven to 180 degrees C.
  2. Peel the onions, leaving a little of the root end intact to help them hold their shape. Place them snugly in a baking tray that has been lightly oiled.
  3. Drizzle the olive oil over the onions and bake them until they become soft, which should take about an hour or possibly a bit longer.
  4. Take the tray from the oven and increase the oven temperature to 220 degrees C.
  5. In a jug or bowl, mix together the grated parmesan cheese, nutmeg, salt, pepper, and cream until well combined.
  6. Pour this creamy cheese mixture over the roasted onions, then sprinkle the smoked paprika on top.
  7. Place the dish back into the oven for 15 minutes, until the sauce is bubbling and has turned a golden brown colour.
