Cheesy Roasted Onions with Smoked Paprika
This recipe offers a distinctive take on cooking onions. Whole onions are first roasted until tender, then topped with a rich mixture of cream, parmesan, and nutmeg. A final bake creates a golden, bubbling cheese sauce, with smoked paprika adding a special touch. It serves 4 to 8 people and takes about 105 minutes to prepare.
Ingredients
- 8 medium onions, preferably white
- 2 tablespoons olive oil
- 4 tablespoons grated parmesan cheese
- 1 pinch of grated nutmeg
- kosher salt or sea salt
- fresh ground black pepper
- 250 ml real cream
- 1/2 teaspoon smoked paprika
Method
- Preheat your oven to 180 degrees C.
- Peel the onions, leaving a little of the root end intact to help them hold their shape. Place them snugly in a baking tray that has been lightly oiled.
- Drizzle the olive oil over the onions and bake them until they become soft, which should take about an hour or possibly a bit longer.
- Take the tray from the oven and increase the oven temperature to 220 degrees C.
- In a jug or bowl, mix together the grated parmesan cheese, nutmeg, salt, pepper, and cream until well combined.
- Pour this creamy cheese mixture over the roasted onions, then sprinkle the smoked paprika on top.
- Place the dish back into the oven for 15 minutes, until the sauce is bubbling and has turned a golden brown colour.
