Cheesy Roasted Corn and Red Pepper Black Bean Dip

Ingredients

  • 1 (14 ounce) can black beans
  • 2 fresh garlic cloves, minced
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon complete seasoning (ground cumin, garlic powder, salt)
  • 2 ears fresh corn
  • 2 tablespoons butter or 2 tablespoons margarine
  • salt

  • 1 red pepper
  • 1 bunch fresh cilantro, chopped
  • 1/2 cup scallion, chopped
  • 1 lime
  • 3/4 cup shredded monterey jack cheese (or pepper jack)

Method

  1. Set your oven to 425 degrees to preheat.
  2. Prepare the red pepper by cutting off the top, removing the seeds, and slicing it into quarters. Flatten the pieces on a small sheet of foil on a baking tray. Roast at 450 degrees for 8 minutes, then set aside to cool.
  3. Shuck the corn, wash it, and pat it dry. Place each ear on a piece of foil large enough to wrap it completely. Season with salt and white pepper, then top each with 1 tablespoon of butter. Wrap the foil tightly around the corn and roast for 30 minutes.
  4. Line a 12-inch glass pie dish with foil. Drain the black beans, reserving about 2 tablespoons of liquid, and pour them into the dish. Stir in 1 teaspoon of apple cider vinegar, the minced garlic cloves, salt to taste, and 1 teaspoon of Complete Seasoning. Place in the oven with the corn and pepper to roast for 20 minutes, or until the liquid has nearly evaporated. Remove and mash the beans lightly with a spoon. Mix in the chopped scallions.
  5. Once the corn is cool enough to handle, slice the kernels from the cob and stir them into the bean mixture. Dice the cooled roasted pepper and add it as well. Squeeze the juice from one lime over everything and mix thoroughly.
  6. Cover the top of the dip evenly with the shredded cheese. Return it to the oven for 5-8 minutes to melt and lightly brown the cheese.
  7. Enjoy the dip warm, served with corn chips for dipping.
