Cheesy Rice Balls

Ingredients

  • 2 tablespoons great value extra virgin olive oil
  • 1/4 cup plain breadcrumbs
  • 2 cups cooked and cooled arborio rice or 2 cups long-grain white rice
  • 1 egg, lightly beaten
  • 1/2 cup finely grated parmesan cheese
  • 1/2 teaspoon salt
  • 6 small mozzarella cheese, cubed each 3/4-inch

Method

  1. Set your oven to 425°F. Prepare a baking sheet by lining it with foil and drizzling it with oil. Place the breadcrumbs on a separate plate.
  2. In a medium bowl, combine the cooked rice with the beaten egg, grated parmesan, and salt. With damp hands, take roughly 1/3 cup of this mixture and shape it into a ball. Press a cube of mozzarella into the middle, then seal and reshape the ball.
  3. Gently roll each formed ball in the breadcrumbs for a light coating. Position them on the prepared baking sheet, rolling them in the oil already there. Continue with the rest of the mixture to make 6 balls. Bake on the middle oven rack for about 25 minutes until golden, turning them over once during cooking.
