This hearty breakfast bake is a fantastic way to use red potatoes. They are boiled, then combined with fried bacon, onion and a blend of sharp cheddar and Monterey Jack cheese. Seasoned with salt, pepper and paprika, the mixture is baked until the potatoes are tender and the cheese is beautifully melted. It serves four to five people and is perfect for a satisfying family meal.

Cheesy Red Potato Bake

Ingredients

  • 8 medium red potatoes
  • 6 slices bacon, cut into small pieces before frying
  • 1/2 cup diced onion
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated monterey jack cheese
  • 1/2 cup diced parsley or 3 tablespoons dried parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon paprika

Method

  1. Set your oven to heat to 350 degrees.
  2. Wash the potatoes and cut each one into quarters. Place them in a saucepan, cover with water and bring to a boil. Cook for 10 minutes. As the potatoes cook, fry the bacon pieces with the diced onion until the bacon has browned. it does not need to be crisp.
  3. Drain the cooked potatoes and transfer them to a large mixing bowl. Add the cooked bacon and onion along with the bacon grease. Mix in all the spices, tossing to coat the potatoes evenly. Next, add the grated cheeses and toss everything together once more.
  4. Transfer the potato mixture into a baking dish. Bake for 30 minutes, or until you can easily pierce the potatoes with a fork.
  5. Take the dish from the oven and allow it to cool for 5 minutes before serving.
  6. Note: You can use Mrs Dash in place of the salt with good results.
