Cheesy Red Bliss Garlic Potatoes

Ingredients

  • 3 lbs Red Bliss potatoes (sliced 1/4-inch thick)
  • 2 1/2 ounces savory herb with garlic (knorr's envelope)
  • 3 tablespoons olive oil (extra light)
  • 1/2 red pepper (diced) (optional)
  • 1/2 cup parmesan cheese (grated)
  • 8 ounces cheddar cheese (shredded)

Method

  1. Slice the Red Bliss potatoes to a 1/4-inch thickness and put them into a large plastic bag.
  2. Tip the seasoning packet, diced red pepper if using, and the grated Parmesan cheese into the bag with the potatoes.
