Cheesy Red Bliss Garlic Potatoes
This straightforward potato dish is both economical and adaptable. Red Bliss potatoes are sliced and tossed with a savoury garlic herb seasoning, optional diced red pepper, and Parmesan cheese. After baking, they are topped with Cheddar for a deliciously cheesy finish. The recipe yields enough for two casserole pans, serving 10 to 12 people.
Ingredients
- 3 lbs Red Bliss potatoes (sliced 1/4-inch thick)
- 2 1/2 ounces savory herb with garlic (knorr's envelope)
- 3 tablespoons olive oil (extra light)
- 1/2 red pepper (diced) (optional)
- 1/2 cup parmesan cheese (grated)
- 8 ounces cheddar cheese (shredded)
Method
- Slice the Red Bliss potatoes to a 1/4-inch thickness and put them into a large plastic bag.
- Tip the seasoning packet, diced red pepper if using, and the grated Parmesan cheese into the bag with the potatoes.
- Pour in sufficient olive oil to lightly coat the potato slices and toss everything together.
- If you have time, let the mixture chill in the refrigerator for an hour.
- Transfer the potatoes to a casserole dish and bake at 350 for 45 minutes.
- Sprinkle the shredded Cheddar cheese over the top and return the dish to the oven for 5-10 minutes. For a golden, firmer topping, you can bake it a little longer before adding the cheese.
