Ingredients
- 4 pounds russet potatoes, cut into 1/4 inch cubes
- 2 teaspoons chili powder
- 1 teaspoon salt
- 0.5 teaspoon ground black pepper
- 6 tablespoons butter, cubed
- 1 (8 ounce) package shredded colby-Monterey Jack cheese blend
- 1 (8 ounce) bottle Ranch dressing
Method
- Set your oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish by lightly greasing it.
- Arrange the cubed potatoes in the prepared dish. Sprinkle them with the chilli powder, salt, and black pepper. Scatter the cubed butter evenly across the potatoes.
- Cover the dish tightly with aluminium foil. Bake for 1 hour in the preheated oven, or until the potatoes are tender. Take the dish from the oven, stir in the shredded cheese and Ranch dressing, then return to the oven. Continue cooking for 10 minutes, until the cheese has melted and is bubbly.
