These savoury patties combine cooked quinoa with grated Fontina cheese, green onions and flour, bound with an egg. They are pan fried until golden and served with a creamy, tangy aioli made from roasted garlic, lemon zest, juice, mayonnaise and a hint of cayenne pepper. The recipe yields 10 to 12 individual cakes.

Cheesy Quinoa Cakes With Roasted Garlic and Lemon Aioli

Ingredients

  • 2 cups cooked quinoa
  • 2/3 cup grated Fontina cheese
  • 3 tablespoons all-purpose flour
  • 2 green onions, thinly sliced
  • 1 egg, lightly beaten
  • 2 teaspoons fresh ground black pepper
  • 2 1/2 tablespoons extra virgin olive oil
  • 1/2 cup light mayonnaise
  • 1 head garlic, roasted
  • 1 lemon, zested and juiced
  • 1/4 teaspoon cayenne pepper

Method

  1. Combine all the cake ingredients, except the oil, in a mixing bowl and stir thoroughly. Season with salt and let the mixture rest for 5 minutes.
  2. Heat the extra virgin olive oil in a large sauté pan.
  3. Shape the quinoa mixture into patties using a ¼ cup measure and place them into the hot pan. You will need to cook them in batches.
  4. Fry the quinoa cakes for approximately 5 minutes per side. Cook all the remaining patties and then set the finished cakes aside.
  5. To make the aioli, put all its ingredients into a food processor, season with salt and pepper, and process until smooth. Transfer to a bowl and serve with the warm quinoa cakes.
