Cheesy Quinoa Cakes With Roasted Garlic and Lemon Aioli
These savoury patties combine cooked quinoa with grated Fontina cheese, green onions and flour, bound with an egg. They are pan fried until golden and served with a creamy, tangy aioli made from roasted garlic, lemon zest, juice, mayonnaise and a hint of cayenne pepper. The recipe yields 10 to 12 individual cakes.
Ingredients
- 2 cups cooked quinoa
- 2/3 cup grated Fontina cheese
- 3 tablespoons all-purpose flour
- 2 green onions, thinly sliced
- 1 egg, lightly beaten
- 2 teaspoons fresh ground black pepper
- 2 1/2 tablespoons extra virgin olive oil
- 1/2 cup light mayonnaise
- 1 head garlic, roasted
- 1 lemon, zested and juiced
- 1/4 teaspoon cayenne pepper
Method
- Combine all the cake ingredients, except the oil, in a mixing bowl and stir thoroughly. Season with salt and let the mixture rest for 5 minutes.
- Heat the extra virgin olive oil in a large sauté pan.
- Shape the quinoa mixture into patties using a ¼ cup measure and place them into the hot pan. You will need to cook them in batches.
- Fry the quinoa cakes for approximately 5 minutes per side. Cook all the remaining patties and then set the finished cakes aside.
- To make the aioli, put all its ingredients into a food processor, season with salt and pepper, and process until smooth. Transfer to a bowl and serve with the warm quinoa cakes.
