Cheesy Potatoes (Slow Cooker)

Ingredients

  • 6 medium potatoes, peeled and cut into 1/4-inch strips
  • 2 cups shredded cheddar cheese
  • 1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
  • 1 small onions, chopped or 1 tablespoon dried onion flakes
  • 7 tablespoons butter, melted, divided
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup sour cream
  • 2 cups herb-seasoned stuffing cubes

Method

  1. Combine the potato strips and shredded cheese, then transfer this mixture to a 5-quart slow cooker.
  2. In a separate bowl, mix together the undiluted cream of chicken soup, chopped onion, 4 tablespoons of the melted butter, salt, and pepper.
  3. Pour the soup mixture evenly over the potatoes and cheese in the slow cooker.
