Cheesy Potatoes on the Grill
These cheesy grilled potatoes are a fantastic side dish cooked in a foil packet. Red potatoes are sliced and layered with butter, onion, garlic and a trio of cheeses before being sealed and grilled. They are ideal for outdoor cooking, whether on a barbecue grill or even over a campfire. The result is tender, flavourful potatoes with a deliciously melted cheese topping, ready in about 40 minutes.
Ingredients
- 2 large red potatoes
- 3 tablespoons butter, sliced fairly thin
- 2 tablespoons onions, minced
- 1 garlic clove, minced
- salt and pepper
- 1/4 cup parmesan cheese, grated
- 1/4 cup mozzarella cheese, shredded
- 1/4 cup cheddar cheese, shredded
Method
- Prepare two large sheets of heavy duty aluminium foil.
- Coat the centre of one foil sheet generously with non-stick cooking spray.
- Wash the potatoes thoroughly and cut them into fairly thick slices.
- Arrange the potato slices in a single, slightly overlapping layer on the prepared foil.
- Scatter the minced onion and garlic evenly over the potatoes.
- Add a generous amount of salt and pepper for seasoning.
- Place the thin slices of butter across the top of the potatoes.
- Evenly sprinkle the grated parmesan, shredded mozzarella and shredded cheddar cheese over everything.
- Cover the potatoes with the second piece of foil, folding and sealing all the edges tightly to create a packet, ensuring the top foil does not press down on the cheese.
- Use a small knife or scissors to make three small holes in the top centre of the foil packet.
- Place the packet directly onto a preheated grill and cook for about 30 minutes.
- Take the packet off the grill and allow it to rest for about 5 minutes.
- Open the packet carefully, as hot steam inside can cause burns.
