Cheesy Potatoes 'N Peppers
This colourful and comforting potato bake is ideal for a gathering. Thinly sliced potatoes are layered with a creamy, homemade Swiss cheese sauce and punctuated with sweet roasted red peppers. The dish is baked until the potatoes are perfectly tender and the sauce is thick and bubbling. It yields a generous amount, making it excellent for a crowd, and any leftovers reheat beautifully.
Ingredients
- 2 cups chopped onions
- 6 tablespoons butter or 6 tablespoons margarine
- 6 tablespoons all-purpose flour
- 1/2-1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups milk
- 2 cups shredded swiss cheese (8-oz.)
- 4 lbs potatoes, peeled and thinly sliced
- 2 (7 ounce) jars roasted red peppers, drained and coarsely chopped
Method
- Cook the chopped onions in butter within a large skillet until they soften.
- Mix in the flour, salt and pepper, whisking to combine.
- Pour in the milk gradually while stirring.
- Heat the mixture until it reaches a boil.
- Continue cooking and stirring for 2 minutes until the sauce thickens.
- Take the skillet off the heat source.
- Add the shredded Swiss cheese and stir until the sauce is smooth.
- Arrange half of the sliced potatoes in two greased 11x7x2 inch baking dishes.
- Spoon half of the cheese sauce evenly over the potatoes.
- Scatter half to two thirds of the chopped peppers on top, then add the rest of the potatoes.
- Pour the remaining cheese sauce over the final potato layer.
- Finish by sprinkling the rest of the roasted peppers over the top.
- Cover the dishes and bake at 350 degrees for 1-1/4 hours.
- Remove the covers and bake for another 10-15 minutes until the potatoes are tender and the sauce has thickened further.
