Cheesy Potatoes for the Grill
This hearty foil packet meal is perfect for outdoor cooking on a barbecue grill or over campfire coals. Sliced potatoes and onion are seasoned and steamed in a sealed pouch before being finished with crumbled bacon and your favourite shredded cheese. It's a satisfying one dish meal that serves four and takes about 60 minutes to prepare and cook, ideal for al fresco dining.
Ingredients
- 4 slices bacon (cooked crisp and crumbled)
- 4 large potatoes, sliced
- 1/4 cup chopped onion
- salt and pepper
- 2 tablespoons butter (do not use lite brand as it will turn to water) or 2 tablespoons margarine (do not use lite brand as it will turn to water)
- 1/2 cup shredded cheese, of choice (we like sharp cheddar, Monterey Jack with jalapenos)
Method
- Prepare two layers of tin foil to create an 18 inch square.
- Place the sliced potatoes, chopped onion, salt, pepper and butter onto the foil.
- Fold the tin foil edges together to form a tightly sealed pouch, allowing some room inside for steam.
- Place the pouch over medium coals and cook for 40 minutes.
- Turn the pouch over several times during the cooking period.
- Open the foil packet with care and add the crumbled bacon and shredded cheese.
- Put the pouch back onto the coals for 3-4 minutes.
- For a vegetarian or lower fat option, you can omit the bacon and cheese.
