Cheesy Potatoes (Easy Au Gratin Potatoes)

Ingredients
- 2 lbs frozen shredded hash browns, thawed
- 1 (10 1/2 ounce) can cream of potato soup or 1 (10 1/2 ounce) can chicken soup
- 1 (10 1/2 ounce) can cream celery or 1 (10 1/2 ounce) can cheddar cheese soup
- 1/2 cup sour cream
- 1/4 cup chopped onion
- 2 -3 garlic cloves, minced or 1/2-3/4 teaspoon garlic powder
- 1/4 cup butter
- 1/2 teaspoon salt (more or less to taste)
- 1/4 teaspoon ground pepper (more or less to taste)
- 1 cup shredded sharp cheddar cheese
- 1 cup crushed corn flakes
- 3 tablespoons melted butter
- 1 tablespoon dried parsley
Method
- Put the thawed hash browns into a very large mixing bowl.
- Mix in the creamed soups and the sour cream until combined, then set this aside.
- Melt 1/4 cup of butter in a saute pan and cook the onion and garlic until tender.
- Add the cooked onion and garlic to the potato mixture, along with the seasonings and shredded cheese, and stir everything together well.
- Transfer the combined mixture into a greased 9 by 13 inch glass baking dish, spreading it out evenly.
- In a separate small bowl, toss the crushed corn flakes with the 3 tablespoons of melted butter.
- Sprinkle this buttery topping evenly over the potato layer in the dish.
- Finish by scattering the dried parsley over the cornflake topping.
- Cover the dish tightly with foil and bake in a 350 degree oven for 1 hour and 15 minutes.
- Take off the foil and continue baking for 30 more minutes, until the top is golden and the dish is bubbly.
- Allow the potatoes to stand for 15 minutes before you serve them.
