Cheesy Potato Soup

Ingredients

  • 2 large potatoes, peeled and chopped
  • 2 cups water
  • 1 tablespoon chicken bouillon granule
  • 1/4 cup butter
  • 4 ounces Velveeta cheese, chopped
  • 1 cup sour cream
  • 1/8 cup finely chopped onion
  • 1/8 cup finely chopped celery, optional
  • salt, to taste
  • pepper, to taste
  • 3 slices crisp-fried bacon, crumbled
  • chives, chopped

Method

  1. Place the chopped potatoes, 2 cups water, and chicken bouillon granules into a soup pot.
  2. You may need a small amount of extra water to just cover the potatoes.
  3. Cover the pot and cook until the potato pieces become tender.
  4. Stir in the butter, chopped Velveeta, sour cream, onions, celery, salt, and pepper until well combined.
  5. Warm the soup, stirring often, until the cheese has fully melted.
  6. Portion the hot soup into individual bowls.
  7. Top each serving with crumbled bacon and chopped chives.
