This rich and creamy potato soup is adapted from a classic Texan cookbook. Ingredients
- 2 large potatoes, peeled and chopped
- 2 cups water
- 1 tablespoon chicken bouillon granule
- 1/4 cup butter
- 4 ounces Velveeta cheese, chopped
- 1 cup sour cream
- 1/8 cup finely chopped onion
- 1/8 cup finely chopped celery, optional
- salt, to taste
- pepper, to taste
- 3 slices crisp-fried bacon, crumbled
- chives, chopped
Method
- Place the chopped potatoes, 2 cups water, and chicken bouillon granules into a soup pot.
- You may need a small amount of extra water to just cover the potatoes.
- Cover the pot and cook until the potato pieces become tender.
- Stir in the butter, chopped Velveeta, sour cream, onions, celery, salt, and pepper until well combined.
- Warm the soup, stirring often, until the cheese has fully melted.
- Portion the hot soup into individual bowls.
- Top each serving with crumbled bacon and chopped chives.
