This recipe recreates the popular deli-style baked potato salad at home. Red potatoes are boiled until tender, then combined with a creamy, tangy dressing of sour cream, mayonnaise and a touch of sugar. It's generously mixed with shredded cheddar cheese and green onions, then finished with a sprinkle of crispy bacon bits for a satisfying side dish that serves four to six people.

Cheesy Potato Salad

Ingredients

  • 2 1/2 lbs red potatoes, cubed (skins on)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup white sugar
  • 1/2 bunch green onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 tablespoon bacon bits

Method

  1. Put the cubed potatoes into a pot and cover them completely with water.
  2. Heat the water until it boils and cook the potatoes for about 10 minutes, or until a fork pierces them easily.
  3. Drain the cooked potatoes and leave them aside to cool down.
  4. Combine the sour cream, mayonnaise, sugar, half of the chopped green onions and half of the shredded cheddar cheese in a large mixing bowl.
  5. Carefully fold the cooled potatoes into the creamy dressing mixture.
  6. Finish by scattering the rest of the cheese and onions over the top, followed by a sprinkle of bacon bits.
