Cheesy Potato Salad
This recipe recreates the popular deli-style baked potato salad at home. Red potatoes are boiled until tender, then combined with a creamy, tangy dressing of sour cream, mayonnaise and a touch of sugar. It's generously mixed with shredded cheddar cheese and green onions, then finished with a sprinkle of crispy bacon bits for a satisfying side dish that serves four to six people.
Ingredients
- 2 1/2 lbs red potatoes, cubed (skins on)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup white sugar
- 1/2 bunch green onion, chopped
- 1 cup shredded cheddar cheese
- 1 tablespoon bacon bits
Method
- Put the cubed potatoes into a pot and cover them completely with water.
- Heat the water until it boils and cook the potatoes for about 10 minutes, or until a fork pierces them easily.
- Drain the cooked potatoes and leave them aside to cool down.
- Combine the sour cream, mayonnaise, sugar, half of the chopped green onions and half of the shredded cheddar cheese in a large mixing bowl.
- Carefully fold the cooled potatoes into the creamy dressing mixture.
- Finish by scattering the rest of the cheese and onions over the top, followed by a sprinkle of bacon bits.
