Cheesy Potato Lasagna

Ingredients

  • 8 -10 russet potatoes
  • 1 cup low-fat cheddar cheese
  • 1 cup reduced-fat mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/4 cup canola oil
  • 2 large onions
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method

  1. Preheat your oven to 400 degrees.
  2. Peel the potatoes and give them a thorough wash.
  3. Slice the potatoes into pieces roughly 1/8" thick, similar to the thickness of a potato crisp.
  4. Season the potato slices with the salt and pepper.
  5. Warm the canola oil in a pan and fry the potato slices until they take on a light golden colour.
  6. Transfer the fried potatoes to drain on kitchen paper.
  7. Slice the onions and cook them in the oil until they become browned.
  8. In an 8" casserole dish, begin layering: start with potatoes, then add 1/2 cup of cheddar, 1/2 cup of mozzarella, the parmesan cheese, the onions, and a touch more salt and pepper.
  9. Continue creating layers in this sequence until you have used up all the components.
  10. Finish the top layer with a scattering of the remaining cheddar cheese.
  11. Place the dish in the oven, uncovered, and bake for 20 minutes.
