Cheesy Potato Lasagna
This Italian-inspired side dish transforms russet potatoes into a comforting, layered bake. Thinly sliced potatoes are fried until golden, then assembled with browned onions and a trio of cheddar, mozzarella, and parmesan cheeses. Ingredients
- 8 -10 russet potatoes
- 1 cup low-fat cheddar cheese
- 1 cup reduced-fat mozzarella cheese
- 1/4 cup parmesan cheese
- 1/4 cup canola oil
- 2 large onions
- 1 teaspoon salt
- 1 teaspoon pepper
Method
- Preheat your oven to 400 degrees.
- Peel the potatoes and give them a thorough wash.
- Slice the potatoes into pieces roughly 1/8" thick, similar to the thickness of a potato crisp.
- Season the potato slices with the salt and pepper.
- Warm the canola oil in a pan and fry the potato slices until they take on a light golden colour.
- Transfer the fried potatoes to drain on kitchen paper.
- Slice the onions and cook them in the oil until they become browned.
- In an 8" casserole dish, begin layering: start with potatoes, then add 1/2 cup of cheddar, 1/2 cup of mozzarella, the parmesan cheese, the onions, and a touch more salt and pepper.
- Continue creating layers in this sequence until you have used up all the components.
- Finish the top layer with a scattering of the remaining cheddar cheese.
- Place the dish in the oven, uncovered, and bake for 20 minutes.
