Cheesy Potato Casserole
This classic potato casserole is a guaranteed crowd pleaser. Potatoes are boiled, chilled and grated before being combined with a rich, creamy sauce made from melted cheese, butter and milk, then mixed with onion and sour cream. The mixture is baked until golden and bubbling for a truly comforting side dish that pairs wonderfully with beef. The recipe yields 6-8 servings.
Ingredients
- 6 medium potatoes (4-5 cups)
- 1 cup shredded cheese
- 1/2 cup milk
- 4 tablespoons butter or 4 tablespoons margarine
- 8 ounces sour cream
- 1/2 cup chopped onion
- 1 teaspoon salt
- 1/2 teaspoon pepper
Method
- Boil the potatoes until tender, then chill them completely before grating.
- Set the grated potatoes aside for later use.
- In a saucepan, melt together the shredded cheese, milk and butter.
- Remove the saucepan from the heat and stir in the chopped onion, sour cream, salt and pepper.
- Gently fold this creamy mixture into the grated potatoes, then dot the top with additional butter and a sprinkle of paprika.
- Bake the casserole at 350 degrees for 45 minutes.
