Cheesy Potato Broccoli Casserole
This hearty casserole combines sliced red potatoes and broccoli florets with diced ham in a rich, seasoned sauce made from cream of chicken soup and sour cream. Topped with a blend of cheddar, asiago, and parmesan cheeses, it's finished with buttery breadcrumbs and baked until golden. Ingredients
- 3 lbs red potatoes, sliced
- 1 lb broccoli, chopped (I use florets only)
- 1 (10 3/4 ounce) can cream of chicken soup
- 1 cup sour cream
- 1/2 lb ham, sliced, cooked (I prefer cubed)
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 tablespoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon basil
- 1/2 cup cheddar cheese, grated
- 1/2 cup asiago cheese, grated
- 1/2 cup parmesan cheese, grated
- 1/2 cup breadcrumbs (for an extra kick use garlic and herb bread crumbs)
- 1/4 cup butter, melted
Method
- Blanch the chopped broccoli for about two minutes, then set it aside.
- Cook the sliced potatoes in a pot of salted boiling water until they are about ¾ cooked, which takes roughly 17 minutes. Arrange them in a baking dish.
- Heat your oven to 350 degrees.
- Mix the cream of chicken soup, sour cream, ham, blanched broccoli, paprika, black pepper, kosher salt, garlic powder, and basil in a bowl until well combined.
- Pour the creamy mixture over the potatoes in the dish. Cover with the grated cheddar, asiago, and parmesan cheeses. Sprinkle the breadcrumbs over the cheese and drizzle the melted butter evenly on top.
- Bake the casserole in the preheated oven for 20 minutes.
