Cheesy Poppy Seed Chicken Casserole
This comforting casserole combines tender baked chicken with a rich, creamy sauce of cheddar cheese, sour cream, and celery soup. Ingredients
- 3 -4 boneless chicken breasts, baked
- 2 cups cheddar cheese
- 1 cup sour cream
- 1 (10 ounce) can cream of celery soup
- 50 Ritz crackers
- 1/2 cup butter
- 2 tablespoons poppy seeds
Method
- Set your oven to heat to 350°F.
- Slice the pre-baked chicken breasts into bite-sized pieces.
- In a mixing bowl, combine the chicken pieces with the cheddar cheese, sour cream, and the can of cream of celery soup.
- Crush the Ritz crackers in another bowl. you will need 50 crackers, which is about one and a half sleeves.
- Set aside a portion of the crushed crackers to use later for the topping.
- Melt the butter.
- Add the main portion of crushed crackers to the chicken mixture, then pour in the melted butter and the poppy seeds, stirring to combine.
- Transfer the combined mixture into a casserole dish, spreading it out evenly.
- Scatter the reserved crushed crackers over the top of the chicken mixture.
- Place in the oven and bake at 350°F for 35 to 45 minutes, until the casserole is bubbly.
