Cheesy Poppy Seed Chicken Casserole

Ingredients

  • 3 -4 boneless chicken breasts, baked
  • 2 cups cheddar cheese
  • 1 cup sour cream
  • 1 (10 ounce) can cream of celery soup
  • 50 Ritz crackers
  • 1/2 cup butter
  • 2 tablespoons poppy seeds

Method

  1. Set your oven to heat to 350°F.
  2. Slice the pre-baked chicken breasts into bite-sized pieces.
  3. In a mixing bowl, combine the chicken pieces with the cheddar cheese, sour cream, and the can of cream of celery soup.
  4. Crush the Ritz crackers in another bowl. you will need 50 crackers, which is about one and a half sleeves.
  5. Set aside a portion of the crushed crackers to use later for the topping.
  6. Melt the butter.
  7. Add the main portion of crushed crackers to the chicken mixture, then pour in the melted butter and the poppy seeds, stirring to combine.
  8. Transfer the combined mixture into a casserole dish, spreading it out evenly.
  9. Scatter the reserved crushed crackers over the top of the chicken mixture.
  10. Place in the oven and bake at 350°F for 35 to 45 minutes, until the casserole is bubbly.
