This comforting Italian casserole is a quick and satisfying dinner option. It layers sliced ready-made polenta with a homemade vegetable marinara sauce and a blend of Italian cheeses before baking until golden. The dish is assembled using convenient prepared ingredients for a rich, filling result that serves six people from an 8-inch dish.

Cheesy Polenta Casserole

Ingredients

  • 0.75 cup shredded provolone or mozzarella cheese
  • 0.25 cup shredded fontina cheese
  • 1 teaspoon olive oil
  • 1 green bell pepper, chopped
  • 2 green onions, chopped
  • 0.25 teaspoon minced garlic
  • 1 (14 ounce) jar marinara sauce
  • 1 (16 ounce) tube ready-made polenta, cut into 1/4-inch slices
  • 0.5 cup grated Parmesan cheese

Method

  1. Set your oven to 350 degrees F (175 degrees C). Prepare an 8-inch square casserole dish by lightly greasing it. Combine the shredded provolone and fontina cheeses in a bowl.
  2. Warm the olive oil in a saucepan. Add the chopped green bell pepper, green onions, and minced garlic, cooking for about 3 minutes until the pepper softens. Pour in the marinara sauce and let it simmer for 5 to 7 minutes, giving it an occasional stir.
  3. Cover the base of the prepared dish with a thin coating of the sauce. Place one third of the polenta slices over the sauce, followed by one third of the mixed cheeses. Spoon another thin layer of sauce over the cheese. Build two more identical layers. Finish by sprinkling the grated Parmesan cheese over the top.
  4. Place the dish in the heated oven and bake for about 25 minutes, until the cheese topping is golden brown and bubbling.
