This indulgent sharing bread is ideal for gatherings. It features crusty baguettes topped with a flavourful sauté of finely chopped onions and garlic. This is covered with a rich mixture of mozzarella, parmesan cheese and mayonnaise before being broiled until golden and bubbling. The recipe makes two long loaves, but you can easily adjust it for one. You will absolutely adore this tasty snack.

Cheesy Onion Garlic Bread

Ingredients

  • 2 French baguettes (purchase the long thin crusty bread)
  • 2 large yellow onions, very finely chopped (or minced)
  • 2 tablespoons minced fresh garlic (or to taste)
  • salt and black pepper
  • 1/4 cup butter, softened (can use more)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup mayonnaise (do not use salad dressing it's too sweet!)

Method

  1. Preheat your oven to the broiler setting.
  2. Cut each baguette diagonally into slices roughly 3/4-inch thick.
  3. Place a medium skillet on the heat and melt the butter.
  4. Cook the finely chopped onions and minced garlic for about 5-6 minutes until softened, then season with a little black pepper and salt. Set this mixture aside to cool.
  5. Mix together the shredded mozzarella, grated parmesan cheese and mayonnaise in a bowl.
  6. Lay the sliced baguette pieces out on a large baking sheet.
  7. First spread the cooled onion and garlic mixture over each bread slice, then top with the combined cheese and mayonnaise mixture.
  8. Place under the broiler for about 5 minutes, or until the cheese is melted, bubbly and lightly browned.
