Cheesy Onion Casserole
This rich casserole features sweet onions sauteed in butter and layered with Swiss cheese. A creamy sauce made from soup, half-and-half, and soy sauce is poured over the top. The dish is finished with buttered bread slices and baked until the cheese is melted and golden. It serves eight people and takes about 55 minutes to prepare and bake.
Ingredients
- 4 -6 tablespoons butter
- 3 large sweet onions, sliced
- seasoning salt (to taste) or white salt (to taste)
- fresh ground black pepper (to taste)
- 2 cups shredded swiss cheese, divided
- 1 (10 ounce) can cream of chicken soup, undiluted
- 2/3 cup half-and-half or 2/3 cup milk
- 1 teaspoon soy sauce (or to taste)
- 8 slices French bread, buttered on both sides
Method
- Lightly grease a 2-quart baking dish.
- Melt the butter in a large skillet and cook the sliced onions until they are soft and have a light golden colour. Season with salt.
- Place the cooked onions into the prepared dish and layer with two-thirds of the shredded cheese, adding black pepper between the layers.
- Combine the cream of chicken soup, half-and-half, and soy sauce in a saucepan and warm through, stirring to mix well.
- Pour the warm sauce evenly over the onion and cheese layers.
- Arrange the buttered French bread slices on top of the casserole.
- Bake uncovered at 350 degrees F for 15 minutes.
- Carefully submerge the bread into the sauce, then sprinkle the rest of the cheese over the top. Return to the oven and bake for another 15 minutes.
