Cheesy Omelette Burgers
These substantial vegetarian burgers feature a chunky omelette made with eggs, peas, and mature cheddar, cooked in a pan and finished under the grill. The wedges of omelette are served in toasted burger buns spread with onion chutney or chilli jam, accompanied by salad leaves and optional tomato slices or sweet potato wedges. It's a quick and satisfying Italian-inspired dish perfect for lunch or dinner.
Ingredients
- 1 tbsp olive or rapeseed oil
- 8 large eggs beaten
- 200g frozen peas
- 85g mature cheddar grated
- 4 large burger buns toasted
- 4 tbsp onion chutney or chilli jam
- handful salad leaves (we used rocket), to serve
- slices of tomato (optional), to serve
- sweet potato wedges (optional), to serve
Method
- Warm the oil in a 20cm wide frying pan and preheat the grill. Season the beaten eggs and pour them into the pan with the peas. Give it a quick stir, then leave it to cook for 8 mins until the base is firm and starting to colour. Sprinkle the grated cheese over the top and place under the grill for 3 mins until the surface is firm and the cheese is melted and bubbling.
- While the omelette cooks, toast the burger buns and spread each one with chutney or chilli jam. Slice the cooked omelette into 4 wedges. Place a wedge inside each bun, top with a handful of salad leaves and some tomato slices if using. Serve with sweet potato wedges on the side, if desired.
