Cheesy O'Brien Egg Scramble
This all-in-one breakfast dish is simple to assemble. It combines frozen O'Brien potatoes, crispy bacon, scrambled eggs and plenty of cheddar cheese into a satisfying bake. Ideal for a brunch buffet or serving guests, it yields enough for a group. The total preparation and cooking time is 55 minutes.
Ingredients
- 1 (28 ounce) package o'brien frozen potatoes
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 (10 ounce) can condensed cheddar cheese soup, undiluted
- 1 lb sliced bacon, cooked and crumbled
- 12 eggs, lightly beaten
- 2 tablespoons butter or 2 tablespoons margarine
- 8 ounces shredded cheddar cheese
Method
- Cook the frozen hash browns in a large skillet as directed on the package.
- Season the cooked potatoes with garlic salt and pepper.
- Move the seasoned potatoes into a greased 2 1/2-quart baking dish and spread the undiluted soup on top.
- Keep 1/2 cup of the crumbled bacon aside and scatter the rest over the layer of soup.
- Lightly beat the eggs and scramble them with butter in a separate skillet until they are almost fully cooked.
- Place the scrambled eggs over the bacon, then cover with shredded cheese and the reserved bacon.
- Bake without a cover at 350° for 20-25 minutes or until the cheese has melted.
