Cheesy O'Brien Egg Scramble

Ingredients

  • 1 (28 ounce) package o'brien frozen potatoes
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 (10 ounce) can condensed cheddar cheese soup, undiluted
  • 1 lb sliced bacon, cooked and crumbled
  • 12 eggs, lightly beaten
  • 2 tablespoons butter or 2 tablespoons margarine
  • 8 ounces shredded cheddar cheese

Method

  1. Cook the frozen hash browns in a large skillet as directed on the package.
  2. Season the cooked potatoes with garlic salt and pepper.
  3. Move the seasoned potatoes into a greased 2 1/2-quart baking dish and spread the undiluted soup on top.
  4. Keep 1/2 cup of the crumbled bacon aside and scatter the rest over the layer of soup.
  5. Lightly beat the eggs and scramble them with butter in a separate skillet until they are almost fully cooked.
  6. Place the scrambled eggs over the bacon, then cover with shredded cheese and the reserved bacon.
  7. Bake without a cover at 350° for 20-25 minutes or until the cheese has melted.
