Cheesy Oatcakes with Soft Cheese & Grapes
These savoury oatcakes are a perfect snack or light cheese course. The dough, made with melted butter, oatmeal, flour, parmesan and sesame seeds, is rolled thin, cut into shapes and baked until golden. Once cooled, they are served with soft cheese and grapes for a simple yet satisfying bite. The recipe yields 24 oatcakes and takes about 35 minutes to prepare and bake.
Ingredients
- 50g butter
- 100g medium oatmeal
- 100g plain flour plus extra for dusting
- 1 tsp baking powder
- 2 tbsp grated parmesan or vegetarian alternative
- 2 tbsp sesame seeds (optional)
- soft cheese and grapes, to serve
Method
- Set your oven to 200C/180C fan/gas 6. Melt the butter in a small saucepan and allow it to cool a little. In a mixing bowl, combine the oatmeal, flour, baking powder, parmesan and optional sesame seeds with ½ tsp salt. Pour in the melted butter. Add 5 tbsp of boiling water and mix to form a firm dough, using an extra 1 tbsp of boiling water if the mixture seems dry.
- Place the dough on a work surface lightly dusted with flour. Roll it out to the thickness of a £1 coin. Use a knife to cut the dough into small squares or triangles measuring 3-4cm. Put the shapes on a baking sheet lined with parchment. Gather any leftover dough, roll it out again and cut more shapes. Bake for 12-15 mins until they turn a golden colour. Let them cool briefly on the sheet before moving them to a wire rack to cool fully. Enjoy with soft cheese and grapes if desired.
