Cheesy Nacho Bake

Ingredients

  • 1 lb lean ground beef
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1/2 cup water
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 3/4 cup sour cream, divided
  • 6 ounces tortilla chips (7 cups)
  • 1 1/2 cups shredded cheddar cheese
  • 1 green onion, sliced

Method

  1. Preheat your oven to 350 deg. F.
  2. Cook the ground beef in a large skillet until browned, then drain off any excess fat and return the meat to the pan.
  3. Pour in the can of diced tomatoes with their juices, add the water and the taco seasoning mix, stirring to combine. Let this mixture cook for 10 minute, giving it an occasional stir.
  4. Remove the skillet from the heat and mix in 1/4 cup of the sour cream.
  5. Take half of the tortilla chips and spread them in the bottom of a 13x9-inch baking dish. Spoon over half of the meat mixture, then sprinkle with half of the shredded cheese. Repeat these layers with the remaining chips, meat and cheese.
  6. Place the dish in the oven and bake for 20 minutes or until the entire bake is heated through.
  7. Once baked, scatter the sliced green onions over the top and serve with the rest of the sour cream.
