Cheesy Mustard Mash
This British side dish offers a lower-fat alternative to traditional mash. Maris Piper potatoes are boiled and mashed with low-fat crème fraîche and strong cheddar, then topped with a mixture of wholegrain mustard, more cheese, and fresh thyme leaves before grilling to a golden finish. It's a flavourful accompaniment, ideal served with beef. The recipe serves four people.
Ingredients
- 1kg Maris Piper potato cut into large chunks
- 4 tbsp low-fat crème fraîche
- 50g very strong cheddar grated
- 2 tbsp wholegrain mustard
- 1 tbsp thyme leaf
Method
- Cook the potato chunks in salted water for 20 mins until tender, then drain them thoroughly.
- Set your grill to high. Mash the drained potatoes until smooth, then incorporate the crème fraîche and half of the grated cheese. Season as required, then transfer the hot mash to a medium baking dish and level the surface.
- Combine the remaining cheese with the wholegrain mustard and thyme leaves. Spread this mixture over the mash surface. Place under the grill until the cheese topping is melted and golden, then serve alongside your beef.
