Cheesy Mushroom Bake
This savoury bake makes a wonderful side dish for many meals, with a texture reminiscent of a stuffing. Its flavours develop best when the assembled dish is chilled for several hours or overnight prior to baking. Mushroom enthusiasts can try using different varieties or increasing the quantity. It serves 5 to 7 people.
Ingredients
- 3 tablespoons butter
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1/2 lb sliced mushrooms (may add more if desired)
- 4 cups day old whole wheat bread, cubed
- 8 ounces shredded cheddar cheese (mild)
- 2 eggs
- 2 cups milk
- 2 teaspoons dry mustard
- salt and pepper, to your taste
Method
- Melt the butter in a large skillet.
- Add the chopped celery, onion and sliced mushrooms to the skillet.
- Cook the mixture, stirring now and then, until the onions turn translucent and the mushrooms release their juices, for about 10 minutes.
- Place half of the cubed whole wheat bread into the base of a buttered 2 quart casserole dish.
- Spoon half of the cooked mushroom mixture over the bread layer.
- Scatter half of the shredded cheddar cheese on top.
- Create another layer using the rest of the bread cubes, the remaining mushroom mix and the rest of the cheese.
- Whisk the eggs, milk, dry mustard, salt and pepper together in a bowl, then pour this custard over the layered ingredients.
- Place the casserole in the refrigerator for a minimum of 3 hours or leave it overnight.
- Bake the dish at 325 degrees for approximately 50 minutes, or until the custard has set firmly.
- Allow it to rest for 5 minutes before you serve.
