Cheesy Mushroom Bake
This comforting bake features tender mushrooms in a creamy garlic and thyme sauce, topped with a crisp layer of cheese and brown breadcrumbs. It is designed as a lighter side dish, using reduced fat cheeses and light cream cheese. The whole dish comes together in just 35 minutes for a satisfying and flavourful accompaniment.
Ingredients
- 600 g button mushrooms
- 2 garlic cloves (peeled and crushed)
- 4 g fresh thyme (leaves removed from stalks)
- 3 tbsp light cream cheese
- 1/4 tsp garlic granules
- 25 ml boiling water
- 2 slices brown bread
- 20 g Parmesan cheese (finely grated)
- 30 g reduced fat Cheddar cheese (finely grated)
- low calorie cooking spray
- salt and pepper (to taste)
Method
- Set your oven to heat to 200ºC.
- Use low calorie spray on a frying pan and place it over heat. Cook the mushrooms and garlic for 8-10 minutes until they soften and their liquid reduces.
- Mix the light cream cheese, 25 ml boiling water, thyme leaves and garlic granules in a small bowl. Add salt and pepper to season and set this mixture aside.
- Process 2 slices of brown bread in a food processor to create crumbs. Stir in the finely grated Cheddar and Parmesan cheeses.
- Transfer the cooked mushrooms to an ovenproof dish. Pour the cream cheese sauce over them and mix well to ensure they are fully coated.
- Evenly scatter the cheesy breadcrumb topping over the mushrooms. Bake for 10 minutes until the top is crispy and has a light golden colour.
