Cheesy Mushroom Bake

This comforting bake features tender mushrooms in a creamy garlic and thyme sauce, topped with a crisp layer of cheese and brown breadcrumbs. It is designed as a lighter side dish, using reduced fat cheeses and light cream cheese. The whole dish comes together in just 35 minutes for a satisfying and flavourful accompaniment.

Cheesy Mushroom Bake

Ingredients

  • 600 g button mushrooms
  • 2 garlic cloves (peeled and crushed)
  • 4 g fresh thyme (leaves removed from stalks)
  • 3 tbsp light cream cheese
  • 1/4 tsp garlic granules
  • 25 ml boiling water
  • 2 slices brown bread
  • 20 g Parmesan cheese (finely grated)
  • 30 g reduced fat Cheddar cheese (finely grated)
  • low calorie cooking spray
  • salt and pepper (to taste)

Method

  1. Set your oven to heat to 200ºC.
  2. Use low calorie spray on a frying pan and place it over heat. Cook the mushrooms and garlic for 8-10 minutes until they soften and their liquid reduces.
  3. Mix the light cream cheese, 25 ml boiling water, thyme leaves and garlic granules in a small bowl. Add salt and pepper to season and set this mixture aside.
  4. Process 2 slices of brown bread in a food processor to create crumbs. Stir in the finely grated Cheddar and Parmesan cheeses.
  5. Transfer the cooked mushrooms to an ovenproof dish. Pour the cream cheese sauce over them and mix well to ensure they are fully coated.
  6. Evenly scatter the cheesy breadcrumb topping over the mushrooms. Bake for 10 minutes until the top is crispy and has a light golden colour.
