Cheesy Mexican Rice and Bean Burritos

Ingredients

  • 1 (10 ounce) can enchilada sauce
  • 1 cup instant rice, uncooked
  • 1/2 cup green bell pepper, cut in bite size thin strips
  • 1 (16 ounce) can vegetarian refried beans, heated
  • 4 (9 inch) flour tortillas, heated
  • 1 medium tomatoes, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 sour cream

Method

  1. Bring the enchilada sauce to a boil in a medium saucepan.
  2. Stir in the instant rice and the strips of green bell pepper.
  3. Cover the pan, take it off the heat and leave it to stand for 5-10 minutes until the liquid is absorbed, then fluff the rice with a fork.
  4. Spread a quarter cup of the warmed refried beans over each flour tortilla, leaving a one inch border around the edge.
  5. Divide the rice mixture between the tortillas, then top each with chopped tomato and shredded cheddar cheese.
  6. Add a spoonful of sour cream down the centre of each tortilla.
  7. Roll up the tortillas tightly and serve immediately while still warm.
