Cheesy Mexican Meatloaf
This recipe offers a flavourful take on classic meatloaf, incorporating Mexican-inspired ingredients like taco cheese and jalapenos. It combines ground beef with a medley of chopped bell peppers, onion, and a blend of seasonings for a moist and tasty result. The loaf is topped with extra cheese and barbecue sauce before baking. It serves five to six people and takes about 75 minutes from start to finish.
Ingredients
- 1 1/2 lbs ground beef
- 1/2 cup shredded taco blend cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1 1/2 tablespoons soy sauce
- 1/2 teaspoon ground sage
- 1/2 teaspoon ground coriander
- 1 dash oregano
- 2 chopped fresh garlic cloves
- 1/4 medium onion
- 1/4 chopped red bell pepper
- 1/4 chopped yellow bell pepper
- 1/4 chopped orange bell pepper
- 1/3 cup chopped canned jalapeno slices
- 1 tablespoon ground pepper
- 1/2 tablespoon everglades seasoning
- 1/4 cup sweet baby ray's raspberry chipotle barbecue sauce
- 1 dash salt
- 1/2 tablespoon olive oil
Method
- Heat your oven to 350.
- Put the thawed ground beef into a large bowl.
- Add the breadcrumbs, sage, coriander, Everglades seasoning, oregano, pepper, and salt to the bowl and combine.
- Stir in the egg, barbecue sauce, soy sauce, cheese, onion, all the chopped peppers, and the jalapenos.
- Shape the mixture into a single loaf and transfer it to a glass baking dish.
- Create an opening along the top of the loaf, add the garlic and olive oil inside, then seal it closed firmly with your hands.
- Scatter additional taco blend cheese over the top of the loaf.
- Drizzle more barbecue sauce over the cheese topping.
- Bake the meatloaf for 1 hour.
- Allow it to rest for 5 minutes before slicing.
