This savoury cornbread is a delicious side dish, ideal for serving alongside a bowl of chilli. It also makes for a satisfying snack on its own. Cheesy Mexican Cornbread

Ingredients

  • 2 (8 1/2 ounce) packages corn muffin mix
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 (14 ounce) can cream-style corn
  • 1 1/2 cups sour cream
  • 4 eggs, beaten
  • 1 (4 ounce) can green chilies
  • 1/3 cup vegetable oil
  • 1 tablespoon jalapeno pepper, finely chopped

Method

  1. Set your oven to heat to 350.
  2. Take a bowl and stir together the corn muffin mix and the chopped onion.
  3. In a separate bowl, mix the shredded cheddar cheese, cream-style corn, sour cream, beaten eggs, green chillies, vegetable oil, and chopped jalapeno pepper.
  4. Pour the combined wet ingredients into the bowl with the dry mixture.
  5. Stir everything together until the batter is just moistened.
  6. Transfer the batter into a 13x9 baking dish.
  7. Place in the oven and bake at 350 for 50-55 minutes.
  8. Cut into squares and enjoy while still warm.
