Cheesy Mexican Cornbread
This savoury cornbread is a delicious side dish, ideal for serving alongside a bowl of chilli. It also makes for a satisfying snack on its own. The recipe combines corn muffin mix with cream-style corn, sour cream, cheddar cheese, and chopped chillies for a moist and flavourful bake. It yields 18 to 24 squares and takes about 55 minutes from start to finish.
Ingredients
- 2 (8 1/2 ounce) packages corn muffin mix
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 (14 ounce) can cream-style corn
- 1 1/2 cups sour cream
- 4 eggs, beaten
- 1 (4 ounce) can green chilies
- 1/3 cup vegetable oil
- 1 tablespoon jalapeno pepper, finely chopped
Method
- Set your oven to heat to 350.
- Take a bowl and stir together the corn muffin mix and the chopped onion.
- In a separate bowl, mix the shredded cheddar cheese, cream-style corn, sour cream, beaten eggs, green chillies, vegetable oil, and chopped jalapeno pepper.
- Pour the combined wet ingredients into the bowl with the dry mixture.
- Stir everything together until the batter is just moistened.
- Transfer the batter into a 13x9 baking dish.
- Place in the oven and bake at 350 for 50-55 minutes.
- Cut into squares and enjoy while still warm.
