Cheesy Mexican Chicken and Rice
This is a convenient one pot meal prepared in a slow cooker. It features chicken breasts cooked with tomatoes and seasoning, then combined with instant rice and a blend of cheeses. The result is a moist and flavourful dish where the chicken becomes perfectly tender and the rice turns out wonderfully cheesy. It's an easy recipe that requires minimal preparation for a satisfying dinner.
Ingredients
- 4 whole chicken breasts
- 1 (10 ounce) can diced tomatoes with green chilies
- 3 tablespoons taco soup seasoning
- 1 -2 cup instant rice
- 1/2-1 cup shredded monterey jack and cheddar cheese blend
Method
- Place the first three ingredients into your crock-pot, season with salt, then cover and cook on high for about 2 hours until the chicken is tender.
- Stir in the instant rice, ensuring every grain is coated with the cooking liquid. Cook on low for 5-15 minutes.
- Add the shredded cheese blend and mix it through, leaving it in the crock-pot until fully melted.
- You can serve the chicken and rice together on a plate or separately as preferred.
- For a serving suggestion, slice any leftover chicken into strips and quickly sauté them in a hot pan. Use them as a filling for flour tortillas with your favourite toppings to make chicken fajitas.
