Cheesy Mexican Buckwheat Casserole
This dish offers a nutritious alternative to classic Mexican recipes, featuring buckwheat which provides beneficial nutrients. Ingredients
- 4 cups cooked cream of buckwheat
- 1 1/2 cups of chopped onions
- 1/8 cup butter
- 1 cup sour cream
- 1 cup cottage cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded mexican cheese
- 8 ounces green chilies, chopped
- 16 ounces refried beans
- 1 lb ground beef or 1 lb shredded chicken, cooked and seasoned
- 2 1/2 teaspoons cumin
- 1 tablespoon hot sauce
- 2 garlic cloves
- 1 cup of chopped green pepper
Method
- Cook the cream of buckwheat using your choice of milk, water or broth.
- In a pan, cook the onion, green pepper, garlic, butter and your chosen meat with taco seasoning.
- Mix together the prepared buckwheat, sour cream, cottage cheese, refried beans, hot sauce, cumin, salt and pepper.
- In a casserole dish of at least 3 quarts, create layers starting with the buckwheat mixture, followed by the meat and vegetables, shredded cheese and chopped green chillies, then repeat.
- Place the dish in the oven, uncovered, and bake at 375° for about 60 minutes until it is bubbly and golden.
- Allow the baked casserole to stand for 10 minutes before you serve it.
