Cheesy Meatloaf
This family-pleasing meatloaf is enriched with cubes of Colby or Cheddar cheese and a savoury base of sautéed mushrooms, onion, and garlic. Combined with ground beef, breadcrumbs, Parmesan, and seasonings, it creates a moist and flavourful centrepiece. The loaf is baked until firm, then rested briefly before slicing. It yields a satisfying and cheesy main course perfect for a weeknight dinner.
Ingredients
- 2 tablespoons butter
- 1 cup mushroom, finely diced
- 1 cup onion, finely diced
- 2 garlic cloves, minced
- 1 lb ground beef (I use venison)
- 1 cup dry breadcrumbs
- 1/2 cup parmesan cheese, grated
- 1/2 cup plain yogurt or 1/2 cup sour cream
- 1 egg
- 1/4 cup ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 8 ounces colby cheese or 8 ounces cheddar cheese, 1/2 inch cubes
Method
- Cook the mushrooms, onion, and garlic in butter until tender, which should take 5-6 minutes.
- Place the mushroom mixture into a large bowl with all the other ingredients. Mix everything together, then gently fold in the cheese cubes by hand.
- Transfer the mixture to an 8x8 inch square pan and bake at 350 degrees for 45-55 minutes.
- After baking, pour off any excess liquid and allow the meatloaf to rest for 5 minutes prior to slicing.
