Cheesy Meatball Soup

It features homemade beef meatballs simmered with diced celery, corn, potato cubes, sliced carrot, and chopped onion in a savoury broth. Ingredients
- 1 egg
- 1/4 cup breadcrumbs
- 1/3 teaspoon salt
- 1 lb ground beef
- 2 cups water
- 1 cup celery, diced
- 1 cup whole kernel corn
- 1 cup potato, peeled, cubed
- 1/2 cup carrot, sliced
- 1/2 cup onion, chopped fine
- 2 beef bouillon cubes
- 1/2 teaspoon hot sauce
- 1 (16 ounce) jar process cheese sauce
Method
- Mix the egg, breadcrumbs and salt together in a bowl.
- Crumble the ground beef into the bowl and combine everything thoroughly.
- Form the mixture into meatballs measuring about 1 inch in size.
- Brown these meatballs in a large saucepan, then drain any excess fat.
- Pour in the water and add the diced celery, corn, cubed potato, sliced carrot, chopped onion, beef bouillon cubes and hot sauce.
- Bring the contents of the pan to a rolling boil.
- Once boiling, lower the heat, cover the pan and let it simmer for 25 minutes until the meat is cooked and the potatoes are soft.
- Stir the jar of process cheese sauce into the soup and warm it through before serving.
