Cheesy Mashed Potato Burritos
This inventive dish transforms leftover mashed potatoes into a satisfying Mexican-inspired meal. The creamy potato mixture is blended with taco seasoning, sour cream, cheddar cheese and broth, then rolled into tortillas. After being topped with a jar of salsa, the burritos are baked until heated through, creating a comforting and flavourful dinner the whole family will enjoy.
Ingredients
- 1 1/2 lbs potatoes
- 1 1/4 ounces taco seasoning mix
- 1/2 cup sour cream
- 1 cup cheddar cheese
- 1/4 cup chicken broth
- 1/4 cup milk
- 1 (16 ounce) jar salsa
- 6 tortillas
Method
- Combine all ingredients, excluding the salsa and tortillas, in a large bowl. Use a hand mixer to blend until the mixture is creamy in texture, ensuring it is not runny. Should the mix seem dry, incorporate a little extra milk until the desired creaminess is reached.
- Lightly coat a large cake pan with nonstick cooking spray. Warm the tortillas as directed on their packaging to make them pliable. Spoon approximately 3 tablespoons of the potato filling onto each tortilla, roll them up, and arrange them in the prepared pan. Empty the entire jar of salsa over the assembled burritos. Bake in an oven preheated to 350 degrees for 20 minutes. Optionally, sprinkle extra shredded cheddar cheese over the top once removed from the oven.
- Any remaining burritos can be frozen for later. To reheat, use a microwave for 1-3 minutes.
