Cheesy Make-Ahead Instant Potatoes
This comforting casserole transforms instant mashed potatoes into a rich and creamy side dish. Flavoured with garlic and onion powder, and enriched with cream cheese and sour cream, it bakes to a golden finish. Ideal for preparing in advance for gatherings, it yields enough for 12 to 15 servings. The total preparation and cooking time is 70 minutes.
Ingredients
- 1 (15 1/3 ounce) box instant mashed potatoes
- 6 cups water
- 3/4 cup butter or 3/4 cup oleo
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 cups milk
- 16 ounces cream cheese, softened
- 16 ounces sour cream
- paprika
- nonstick cooking spray
- chives (optional)
Method
- Set your oven to 350 degrees. Coat a 13 x 9-inch baking dish with nonstick spray and set it aside.
- Place water, butter, garlic powder, and onion powder into a large saucepan and bring the mixture to a boil.
- Take the pan off the heat and incorporate the softened cream cheese, milk, and sour cream, mixing until you have a smooth consistency.
- Add the instant potatoes to the pan and stir until everything is fully combined.
- Transfer the potato mixture into the prepared baking dish, spreading it out evenly.
- Dust the top with paprika. You can also add chives for garnish if you wish.
- Bake for one hour until the surface is golden brown.
- Note: The assembled dish can be kept in the refrigerator for up to 48 hour before baking. Wait to add the paprika and chives until just before it goes into the oven.
