Cheesy Low-Carb Cauliflower Bake

This rich and satisfying bake transforms cauliflower into a creamy, cheesy side. Florets are boiled and mashed with butter, sour cream and seasonings, then mixed with cheddar and bacon. Baked until hot and bubbly, it's finished with more cheese, crispy bacon and fresh green onions for a delicious low-carb option perfect with any main course.

Cheesy Low-Carb Cauliflower Bake

Ingredients

  • 1 (794 g) cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons 2% low-fat milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheddar cheese, divided
  • 4 sliced reduced-sodium bacon, cooked, chopped and divided
  • 2 green onions, chopped and divided

Method

  1. Set your oven to heat to 150°C.
  2. Boil the cauliflower florets in water for 8–10 minutes until soft, then drain thoroughly. Place the drained cauliflower back into the pot. Mash it with the butter until you reach your preferred consistency. Mix in the sour cream, milk, salt, pepper and garlic powder. Fold through 1/2 cup of the cheddar cheese, half of the chopped bacon and one chopped green onion.
  3. Transfer the combined mixture into a 1 1/2-quart baking dish that has been lightly greased. Bake for 20 minutes or until it is heated through completely. Scatter the remaining 1/2 cup of cheese and the rest of the bacon over the top. Return to the oven for a further 5 minutes. Take the dish out of the oven and finish by sprinkling the remaining green onion on top.
