Cheesy Leek-Ground Meat Soup
This rich and creamy soup combines ground pork and beef with soft leeks in a savoury broth. Flavoured with nutmeg, garlic and onion powder, it is finished with a mild cheese spread for extra indulgence. It is a classic, comforting choice for colder days, perfect served with fresh bread. The recipe yields six portions and takes about 40 minutes to prepare.
Ingredients
- 1 tablespoon butter
- 300 g ground pork
- 200 g ground beef
- 3 leeks, cleaned and cut into thin rings
- 200 g creme fraiche
- 1 liter vegetable broth or 1 liter beef broth
- salt and pepper
- 1/4 teaspoon nutmeg (I have never measured these spices, so these are just estimates)
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 250 g cheese spread (something like Laughing Cow, creamy and mild)
Method
- Melt the butter in a large pot.
- Place the ground meats into the pot and cook until browned.
- Stir in the sliced leeks and cook them until softened, which should take roughly 5 minutes.
- Pour in the broth and creme fraiche, then season with salt, pepper, nutmeg, garlic powder and onion powder. Let it simmer for 20 minutes.
- Add the cheese spread and allow the soup to cook for a further 5 minutes. Check the seasoning before serving hot with bread.
