Cheesy Leek and Bacon Pasta
This Italian pasta dish is a creamy and comforting main course, ideal for a quick weeknight dinner. It combines tender leeks and smoked streaky bacon with herb and garlic soft cheese to create a rich sauce. The pasta is tossed through the sauce, using a little reserved cooking water to achieve a silky consistency that coats every piece. It serves four people and can be prepared in just 30 minutes.
Ingredients
- 1 tbsp olive oil
- 300g leek halved and finely sliced
- 8 rashers smoked streaky bacon sliced
- 400g pasta shapes (we used penne)
- 100g herb & garlic soft cheese
Method
- Warm the olive oil in a large non-stick frying pan. Place the leeks in the pan with 2 tbsp water and cook for about 10 mins until they are very tender. Introduce the bacon, increase the heat and fry until it is cooked through.
- While that cooks, prepare the pasta shapes according to the directions on the packet. Once done, drain the pasta, saving a mugful of the starchy water.
- Add the soft cheese to the pan with the leek and bacon, pouring in some of the saved pasta water. Season and stir over a gentle heat until the cheese has melted. Combine the cooked pasta with the sauce, adding a little more of the reserved water if necessary to help the sauce cling to the pasta.
