Cheesy Latke Kugel

Ingredients

  • 4 lbs frozen hash brown potatoes
  • 4 tablespoons butter
  • 1 large onion, chopped
  • 3 tablespoons chopped garlic
  • 1/4 cup chopped fresh chives
  • 1 cup sour cream
  • 1 cup small curd cottage cheese
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded swiss cheese
  • 4 eggs, beaten
  • 1 teaspoon pepper
  • 1/2 teaspoon mustard powder
  • 2 teaspoons salt
  • 1 tablespoon paprika
  • 1/4 cup shredded parmesan cheese

Method

  1. Prepare the frozen latkes according to the package instructions, heating them for about 10 minutes in a 425 degree Fahrenheit oven until warmed but not fully crisp. Allow them to cool completely before shredding by hand.
  2. Set your oven to 350 degrees Fahrenheit. Lightly grease a 13x9-inch baking dish.
  3. Melt 1 tablespoon of butter in a skillet. Cook the chopped onion for about 7 minutes until softened, then stir in the garlic for one more minute.
  4. In a large bowl, mix together the cooked onion and garlic with the chives, sour cream, cottage cheese, Cheddar cheese, Swiss cheese, beaten eggs, pepper, mustard powder, and 1 teaspoon of the salt.
  5. Set aside roughly 3/4 cup of the shredded latkes for the topping. Gently fold the remaining shredded latkes into the cheese mixture by hand.
  6. Transfer the combined mixture into the prepared baking dish, spreading it out evenly.
  7. Melt the remaining 3 tablespoons of butter. Stir in the last 1 teaspoon of salt, the paprika, and the Parmesan cheese. Mix this with the reserved shredded latkes.
  8. Sprinkle the latke and Parmesan mixture evenly over the top of the dish.
  9. Bake the kugel for about 1 hour until it is fully set and the top is a golden brown colour.
